About Traditional Sago Processing
Traditional sago processing involves several important steps, including cutting down the tree, chopping and splitting the trunk, crushing the pith, extracting the starch, settling, and packaging the starch.
The process begins with cutting down the sago palm, which starts by clearing the area around the tree. The tree is then felled using axes and machetes. After that, the trunk is cut into the desired lengths and split in half using wooden wedges or chisels made from hard wood.
Next, the pith is crushed using traditional tools made of wood or bamboo, known as nani or pangkur. This step—often called tokok sagu, nani sagu, or pangkur sagu—aims to separate and break down the pith from the outer bark of the trunk.
During the starch extraction stage, known as ramas sagu, the crushed pith is placed on a sahani, which is the base of a sago frond equipped with a filter, or runut, made from coconut sheath. Water is added to the crushed pith, then squeezed, stirred, and pressed to release the starch. The mixture of starch and water is then filtered and drained through the sahani into a container, while the remaining pith fibers are discarded.
The next stage is starch settling, carried out in a special container called tawear or goti, which is made from the processed pith of the split sago trunk. Inside the goti, water naturally separates from the starch that settles at the bottom. The wet, settled starch is then packed into tumang, a traditional basket made from sago leaves. Finally, the starch is dried under sunlight until it becomes fully dry and ready for use.
