Kedah Sago Starch Industry for Keropok Lekor

Sago starch is flour derived from the trunk of the sago palm tree. As a gluten-free flour alternative, sago flour is increasingly popular due to its smooth texture and health benefits when consumed appropriately. Sago flour can be used as an ingredient for making keropok lekor.

Keropok Lekor a traditional Malay snack in the form of fish crackers typical of Terengganu, Malaysia, which are made from a mixture of fish (such as selayang or parang) and sago flour.

Land Conditions and the Potential of Sago in Indonesia

Sago is a plant native to Indonesia that thrives particularly well in the eastern regions of the archipelago. Beyond its long-standing role as a traditional food source, sago also holds significant potential as a renewable energy resource. To fully realize these benefits, sago management must be carried out in an integrated manner, encompassing cultivation, processing, marketing, and the strengthening of farmers’ socioeconomic conditions.

Within the context of national food security, sago occupies a highly strategic position. This crop not only serves as an alternative to rice but also plays a role in maintaining ecological balance and providing an environmentally friendly energy supply.

In East Seram Regency, for example, there is a superior local variety known as Molat sago. To optimize this potential, the Maluku Provincial Agriculture Office has implemented sago land management programs. The reorganized area covers approximately 35,717 hectares, with a production capacity of around 9,323 tons. In addition, several smaller-scale development areas have been established, including 323 hectares with a production output of 0.1 tons, 229 hectares yielding 5.2 tons, and 175.4 hectares producing 27.4 tons. These figures demonstrate that sago has strong prospects for increasing farmers’ income, provided it is managed in a professional and systematic manner.

As a follow-up measure, development efforts have also been directed toward designated production centers. One such example is a 25-hectare sago forest area currently managed by 25 local farmers. Originally consisting of natural sago forest, the land has been reorganized into a plantation system to ensure more measurable and consistent productivity. A transformation in community perspectives toward sago management is expected to be a key factor in the success of this program.

Through these initiatives, the benefits of sago extend beyond improving farmers’ welfare alone. More broadly, the program contributes to maintaining soil fertility, conserving the environment, and ensuring a sustainable supply of sago in both quantity and quality over the long term.
