The Utilization of the Sago Palm in Daily Life
Sago is widely recognized as a multifunctional plant that has long played an important role in the daily lives of local communities, particularly in Papua. Nearly all parts of the plant are utilized, ranging from the starch to the leaves and leaf sheaths. Sago starch, for example, is processed into various traditional foods, one of the most well-known being papeda—a staple dish among Papuan communities, including the Ayamaru people of Sembaro Village.
The preparation of papeda begins by placing an appropriate amount of sago starch in a bowl. Water is heated until it reaches a boiling point and is then poured slowly into the starch while stirring continuously. Careful attention must be paid to both the pouring speed and the amount of water used. If the water is added too quickly or in excessive quantity, the papeda will fail to thicken properly; conversely, if too little water is used, the mixture will remain undercooked. Properly prepared papeda has a translucent white appearance and a distinctive chewy texture.
In addition to papeda, sago is also processed into sago bakar (roasted sago). There are two main types of roasted sago: one wrapped in leaves and another prepared without any wrapping. For the wrapped version, dried banana leaves or young banana leaves with a brownish color are commonly used as wrappers.
Approximately two handfuls of sago starch are placed onto the leaf, tightly wrapped, and secured with rattan before being cooked in hot ash for about 30 minutes. Once cooked, the wrapping is removed and the sago is ready to be consumed.
For the unwrapped version, a handful of sago starch is shaped into a ball and dried directly over hot embers. It is then briefly placed into hot ash until fully cooked. The roasted sago is then ready to be enjoyed, releasing a distinctive and appetizing aroma.
Another traditional sago-based preparation is sinoli. The method is relatively simple: a pan is heated over low heat and lightly greased with one tablespoon of cooking oil. Two handfuls of sago starch are added and evenly spread across the pan, followed by an additional drizzle of oil around the edges. Once evenly cooked, the sinoli is removed from the pan and can be served immediately.
